I recently asked Ellen of Confessions of An Overworked Mom to do a guest post recipe. I asked her for a great Valentine’s Day recipe and she really came through for me. I cannot wait to try this one since it looks so delicious! I love Clafoutis. I had never heard of it before she sent it to me and I immediately had to research them and get some at my favorite restaurant! And I know how amazing Ellen is so I know this Valentine’s Day Recipe is going to be amazingly delicious. Raspberry Clafoutis just sounds so yummy.
Raspberry Valentine Clafoutis
Ingredients:
1/2 cup all-purpose flour
1/4 cup sugar
dash of salt
3 tablespoons unsalted butter, melted
finely grated zest of one lemon
1/4 cup milk
2 tablespoons milk
1 pint of red raspberries
Directions:
1. Preheat the oven to 350F.
2. Butter a 9″ pie plate.
3. In a bowl, whisk the flour, sugar, and a pinch of salt.
4. Whisk in the eggs, butter, and lemon zest until smooth.
5. Add the milk and whisk until light and very smooth, about 3 minutes.
6. Pour the batter into the pie plate and top with raspberries.
7. Bake for 30 minutes, until the clafoutis is set and golden. Let it cool slightly. Dust with confectioners’ sugar. Cut into wedges, and serve.
If you’d prefer, instead of the powdered sugar, you can serve with a spoonful of creme fraiche.
