Garlic Chicken and Fried Brown Rice Recipe

Ingredients

  • 2 tbsp vegetable oil divided
  • 1 cup frozen peas and carrots thawed (I actually used the canned kind because I am lazy)
  • 8 ounces boneless skinless chicken breast
  • 1/2 red bell pepper
  • 1/2 C green onion
  • 3 cloves garlic minced (I always use the garlic powder, sorry to all the chefs out there)
  • 3 cups cooked brown rice
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar

Instructions

  • Prepare brown rice by following directions according to the package (I usually boil mine for 20 min)
  • Chop chicken into small sized pieces
  • Heat 1 tbsp of vegetable oil in a large skillet over medium heat. Add chicken, bell pepper, onion, and garlic.
  • Stir chicken and veggies until the chicken is cooked all the way through. It may take 5-8 min. Remove chicken from the skillet and set aside.
  • Add 1 tbsp of oil to the skillet and turn the skillet up to medium-high heat. Slowly add the brown rice. Add soy sauce and rice vinegar to the skillet.
  • Stir in the peas and carrots. Cook for 3-5 minutes.
  • Add the chicken back to the skillet and heat for 3 minutes
