Garlic Chicken and Fried Brown Rice Recipe

I recently got to do a great campaign with Rachael Ray’s Nutrish for Cats and I was asked to make Dinner for Two with one of my lovely kitties.  So I made a Garlic Chicken and Fried Brown Rice recipe since they sent me some brown rice. I had never made fried brown rice before so I thought it would be an adventure.  Turns out I forgot to ‘prepare’ my rice before throwing it in the skillet.  I felt like a silly person.

Ingredients:

2 tbsp vegetable oil, divided

1 cup frozen peas and carrots, thawed  (I actually used the canned kind because I am lazy)

8 ounces boneless, skinless chicken breast

1/2 red bell pepper

1/2 C green onion

3 cloves garlic, minced  (I always use the garlic powder, sorry to all the chefs out there)

3 cups cooked brown rice

2 tbsp soy sauce

1 tbsp rice vinegar

 

Directions:

1. Prepare brown rice by following directions according to the package (I usually boil mine for 20 min)

2. Chop chicken into small sized pieces

2.  Heat 1 tbsp of vegetable oil in a large skillet over medium heat.  Add chicken, bell pepper, onion, and garlic.

3. Stir chicken and veggies until the chicken is cooked all the way through.  It may take 5-8 min.  Remove chicken from the skillet and set aside.

4. Add 1 tbsp of oil to the skillet and turn the skillet up to medium-high heat.  Slowly add the brown rice.  Add soy sauce and rice vinegar to the skillet.

5. Stir in the peas and carrots.  Cook for 3-5 minutes.

6. Add the chicken back to the skillet and heat for 3 minutes.
