Creamy Tomato Sauce with Mushrooms and Artichokes over Linguine Recipe

Being the person who holds all the parties and events in my family I am used to cooking for a lot of people. I think recipes with pasta fill people up and everyone goes home happy. Plus there are so many recipe combinations! Dreamfields Pasta offers many different pasta choices- spaghetti, lasagna, penne, linguine and more. All of them are delicious, and all varieties offer extra fiber and protein that you won’t find in most other brands. I was recently given the chance to use and evaluate Dreamfields Pasta, although I’m no stranger to the brand. I’ve used them many times in different recipes and each time the pasta turned out perfectly and perfectly tasty! It’s #HealthyPastaMonth and Dreamfields is celebrating with a new recipe and a new chance to win EVERYDAY! I am going for the most Veggielicious recipe I can think of for my recipe and I will tell you that my kids had seconds and thirds.

For this recipe I am using Dreamfields linguine. It has 5 grams of fiber and 7 grams of protein per 2 oz serving. It’s very easy to cook- simply boil in unsalted water for 9 minutes and it’s PERFECT- ready for anything you want to do with it.

I made a creamy tomato sauce with mushrooms and artichokes, seasoned and dressed with fresh basil from my garden. The velvety sauce clings beautifully to the wide linguine noodles. It’s a deceptively simple recipe and it’s sooo delicious!

CREAMY TOMATO SAUCE WITH MUSHROOMS AND ARTICHOKES OVER LINGUINE

1 box Dreamfields Linguine
1 to 2 teaspoons coconut oil
24 ounces fresh mini portobello mushrooms, cleaned and quartered
2 cans (14 ounces each) quartered artichoke hearts, drained and rinsed
1 teaspoon granulated garlic
A handful of fresh basil, roughly chopped or dried basil, divided
2 jars (24 ounces) no-salt-added pasta sauce
8 ounces fat-free or light cream cheese, cut into cubes

 

  1. Cook pasta according to package directions. Place pasta in large bowl; set aside.
  1. Meanwhile, heat medium heavy bottomed skillet over medium-high to high heat until hot. Add oil and mushrooms; cook 5 minutes or until mushrooms are soft and liquid has evaporated, stirring occasionally. Reduce heat to medium. Add artichokes and garlic, stirring to combine. Stir in half of fresh basil or the dried basil, as desired. Reduce heat to low.
  1. Heat pasta sauce in large saucepan over medium heat. Add cream cheese, stirring to combine and heat through. Use a submersible blender or whisk to blend the cream cheese completely into the sauce.
  1. Top pasta with pasta-cream cheese sauce, then with mushroom-artichoke mixture. Garnish with remaining fresh basil.

Makes 8 servings.

  1. I’m a fan of lasagna, it’s so easy to mix it up and add whatever your heart desires. I usually go with turkey meatballs, spinach and ricotta.

  2. I really love homemade mushroom ravioli. When I don’t have the time for that, however, I do like to prepare rigatoni with Italian sausage and parmesan.

    Lobster pasta..oh my so good . I wish we could get lobster more often.

  4. We always had a lot of spaghetti and meat sauce growing up and my Mom always made a bowl of white pasta which was pasta, butter, garlic and salt and it’s still one of my favorite pasta dishes and simple to make.

    I love mushrooms and artichokes, and I bet it would be so good in sauce – I’ve never tried adding a little cream cheese – I’m so excited to try this!!! I’ve tried Dreamfields pasta, but I don’t think I tried the linguine!
