So being a redhead I get people asking me tons of questions about St. Patrick’s Day. Because all redheads know everything about it. Of course we do because we are all Irish, every single one of us. That is just silly. I actually am but still. I do love all the great decorations and fun everyone has doing everything green. Even food. So without further rambling from me, here is a great way to make St. Patrick’s Day Shamrock pancakes using a simple Jiffy Mix or Bisquick mix. All you really need is some green food dye and a shamrock cookie cutter. I am pretty sure you can find the cookie cutter at the dollar store but if you don’t want to search you can always buy this Wilton set on Amazon for super cheap. So amaze your family with themed breakfast! Or give your friends a great morning after breakfast when they have had too many green beers. And it makes for a fun St. Patrick’s Day craft.
Jiffy Mix (you could also use Bisquick)
2 Eggs
2 Tbs. Oil
1 1/3 Cup of Milk
non-stick spray such as Pam
Green food coloring
Shamrock Shaped Cookie Cutters (you can buy this one for less than $5)
Directions –
Combine pancake mix, eggs, oil and milk. Once mixed pour ½ the mixture into a separate measuring cup and add a few drops of green food coloring stirring well.
Heat griddle and spray with non-stock spray
Once heated pour the pancake batter onto the griddle. Once bubbly on top, flip and cook 1-2 more minutes until cooked through.
Use the Shamrock cookie cutter to cut out the pancakes.
