With two children, two cats, a husband, and myself in a house everything is a chore. Every day we have something else going on especially since Baby E has been so sick lately. It makes getting dinner ready a total pain. I admit we have had sandwiches at least two nights of the last two weeks because I just didn’t have time or didn’t feel like cooking after all the errands, breathing treatments, medicines, and chores we have to do when everyone gets home. So when I was asked recently to create a special weeknight dinner, I was worried I could not come through.
