My kids always know something is up when I have several sets of pans out and my apron. I rarely use it unless I am planning on doing a lot of baking. Well I did a ton this past weekend. I spent hours trying new things because I was challenged to create something fun and interesting with baby cereal. I know, right! Baby cereal. I used to make things with my son’s cereal way back in the day. I always used the Gerber Oatmeal Cereal then so I decided to try it first. Gerber offers 4 different types of cereals, Single-Grain, Multi-Grain, Oatmeal & Banana, or Lil’ Bits Oatmeal Banana Strawberry
I made Strawberry & Blueberry Pancake Muffins. I had never made pancake muffins before and I have to admit that I failed the first time. I added too much fresh fruit. And I actually used all of my fresh blueberries. So I tried again with frozen blueberries and almost all of my strawberries and it came out great! I love the fact that by using cereal I know it’s iron-fortified. Also lots of iron and it has Vitablocks blend of B Vitamins, Vitamins E and C, iron, zinc, and calcium.
My baby was certainly impressed. She ate two of them right away. And when I say right away, I mean she tried to shove half of the muffin in her mouth.
INGREDIENTS:
1 cup Gerber Oatmeal Single Grain Cereal
1 tbsp sugar
3 tsp baking powder
1/4 tsp salt
3/4 cup almond milk
1 large egg
2 tbsp almond butter
1/2 tsp vanilla
1/2 cup fruit (I used diced strawberries & blueberries)
DIRECTIONS:
Preheat oven to 350ºF.
Whisk together the oatmeal, sugar, baking powder, and salt.
Add the almond milk, egg, almond butter, and vanilla. Mix until smooth batter forms.
Gently fold in the fruit of your choice
Pour 1/4 cup batter into each cup in the muffin tin. Bake for 15-18 minutes until toothpick inserted comes out clean.
****I used almond milk and almond butter. My son is lactose intolerant and many of my friends have children who are allergic to peanut butter. It’s not needed for the recipe though so you can always substitute whole milk and regular peanut butter.
Strawberry and Blueberry Muffins Recipe with Gerber
Ingredients

Instructions

Gerber has a whole range of products made for children now. My five year old loves the yogurt blends even if he calls it ‘baby food’. I decided to use yogurt and the oatmeal cereal to make some apple cinnamon muffins. I will add that recipe to my blog later but I wanted to show how they turned out!

The classic! I love muffins.
Baked for 35 minutes and still raw in the middle. Waste of my time and ingredients.
I hate that happened. They turn out fine for me when I bake mine. Maybe its the type of stove?
