Frito Lay Taste of Home Recipe & Giveaway!

Several years ago during football season, my mom found a recipe online for ‘Chili Pie’. It was basically chili but you pour it on top of a cornmeal base to make it a ‘pie’.  So being the awesome family that we are, my mom and grandmother improved it. Now every year we make this several times during football season which here in the South is like a holiday.

Now every time I eat Chili Cheese Fritos, I think of my grandmother’s house, football season, and Chili Pie.

 

Chili Pie
Crust & Toppings
·         1 pkg Mexican cornbread mix
·         1 large bag of Frito’s cornchips  (you can use chili cheese for extra flavor)
·         1 lb of shredded cheddar cheese
Main ingrediants
·         2.5 lbs of hamburger meat (we use lean)
·         ¼ onion chopped fine or onion flakes
·         1 can of tomatoes (we use diced fire roasted)
·         2 cans of chili beans
·         1 pkg Chili mix
·         1 tsp oil
·         Optional: chili powder, salt, pepper
In large sauce pot, add 1 tsp oil and diced onions/flakes, add in hamburger meat and cook on medium heat until all meat is brown. Drain excess oil off hamburger meat and put back into sauce pan. Add chili mix, tomatoes, and chili beans.  Optional: Add chili pepper, salt, pepper to taste. Stir  well and often so flavors mix together. Heat on low for as long as possible, just like you would if you were making chili normally.
In a large bowl, mix up Mexican cornbread mix as directed on the package.
Preheat oven to 350°F. Grease a 9″ × 13″ baking dish and pour cornbread mixture in.  Put it in the oven for 5 min to allow mix to settle. Next spoon chili onto the cornbread and cook for 15-20 minutes or until cornbread feels crusty on bottom. Add Frito corn chips and cheese to the top make sure to cover the whole thing. You can either let it sit for few minutes for the cheese to melt or put it back in the hot oven for about 2 minutes.

Serve in bowls or with large Fritos Scoops.

I never realized that Frito Lay had so many flavors of chips!  I would really like to try their Lay’s Creamy Garden Ranch and Lay’s Balsamic Sweet Onion. Both sound yumm!  What flavors would you like to try?

2.       Midwestern U.S. – Lay’s Creamy Garden Ranch
3.       Northwestern U.S. – Lay’s Balsamic Sweet Onion
4.       Southwestern U.S. – Lay’s Chipotle Ranch
5.       Southeastern U.S. – Lay’s Cajun Herb & Spice 
 
 All of the Lay’s Regional Flavored potato chips are made with all natural ingredients and cooked in healthier oils, like corn and sunflower oils, which contain 80% or more of polyunsaturated and monounsaturated fat – the “good fats.” They also contain 0 grams of trans fats per serving!
 
There’s also less sodium in them than you might think – a 1-oz serving of our Lay’s Regional Flavored potato chips contains less salt than a plain bagel!
