Announcing Meatless Mondays, with the help of a new contributing blogger!

I’ve been watching the Meatless Monday movement for some time- I love their environmentally friendly message, and their push to get more fresh fruits and vegetables in front of families everywhere. Never heard of them? Check them out!



They have free resources, tips, and recipes for meatless meals you and your family will love!

Meatless Mondays are observed in homes, schools, and organizations in 35 countries and I’m ready to jump on that bandwagon! I’m looking to trim my grocery budget, my waistline, and my carbon footprint and this is an easy way I can do all three at once! Assisting me in this endeavor is Amy O’Dell, homeschooling mom of two that lives in Birmingham, AL. A vegetarian for almost 8 years, she lives with a highly carnivorous teen boy and has to be creative with how she feeds her family. She’s excited to be contributing to Generations of Savings and showing you all simple, delicious, cost-conscious meals your kids will love and that you can use to observe Meatless Mondays!

  1. I love this! We regularly eat vegetarian meals, but had never followed Meatless Mondays. We will have to change that.
