I was so excited to be able to participate in the Mezetta Memories campaign! They have so many products that are perfect for adding a punch of flavor to dishes, and this time of year, I can use a shortcut to flavorful foods everyone will love! I know I love their olives and usually have several types of them in my fridge.
I knew immediately I wanted to make hummus. I have guests coming over tomorrow for lunch and I want an additional appetizer to go along with what I’m going to prepare, and I need to be able to keep it light and flavorful. The Mezzetta Garlic-Stuffed Olives and Fire-Roasted Red Peppers turned out to be perfect for making a quick, healthy hummus that’s sure to be a huge hit!
This is SUCH an easy recipe. No cooking, just ingredients piled into a blender or food processor and voila!!! I’ve made a lot of hummus in my day and I have to say, using the Mezzetta olives and peppers gave it such a lift- it is easily the best hummus I’ve ever made. I’m having to refrain from wolfing down the olive-garlic one with a spoon before my guests get here tomorrow! I don’t think I’ll ever make plain hummus again! Mezzetta Fire-Roasted Red Pepper Hummus
2 cans chickpeas, one drained, one with liquid
1T garlic powder
1/3 C tahini
3T lemon juice
1C Mezzetta Fire-Roasted Red Peppers
Cumin (if desired) for dusting
Add all ingredients except the cumin to your blender or food processor. Blend to a smooth consistency. Serve garnished with more Mezzetta Fire-Roasted Red Peppers, a sprinkling of cumin, and you’re good to go!
Mezzatta Garlic Stuffed Olive Hummus
2 cans chickpeas, one drained, one with liquid
1/3 C tahini

1/2-2/3 C Mezzetta Garlic Stuffed Olives
Add all ingredients to your blender or food processor. Blend to a smooth consistency. You can adjust the amount of olives & garlic to taste- I love garlic more than I can say, so I went heavy on them. Yum.
These dips are fantastic for holiday get-togethers- no baking or cooking, no messy cleanup. It takes a mere five minutes to prepare and serve, and with some pita bread or crackers they make a perfect addition to any meal or potluck.
