Meatless Mondays are observed in homes, schools, and organizations in 35 countries and I’m ready to jump on that bandwagon! I’m looking to trim my grocery budget, my waistline, and my carbon footprint and this is an easy way I can do all three at once! I love this! We regularly eat vegetarian meals, but had never followed Meatless Mondays. We will have to change that.
