Mashed Potato Garlic Meatloaf Burger Recipe

If there is one thing the South loves, it’s football season.   The weather gets cooler, the nights get longer, the colors start to darken and it’s time to pull out the grill for a few tailgating parties.  In my opinion there are few dishes that can beat a good BBQ so when I got asked to make something with the awesome Kingsford charcoal and Walmart beef, I pulled up some websites to look for something new we haven’t ever tried before.  The one that caught my eye was a meatloaf hamburger. While I’m not a big fan of meatloaf cooked in the oven I know that grills make everything delicious.  If your family is anything like mine you can’t have meat loaf without some mashed potatoes which means that when I was telling my husband about this I was threatened with a divorce if there weren’t any mashed potatoes included.  I always mixed the two when my mom made it so I knew the only thing to do was a meatloaf and mashed potato burger.

This is a really easy recipe and you can tweak it however you want.  You can even use your mom’s old meatloaf recipe and it’ll be even more delicious.  Don’t tell her though, she might not cook for you anymore and that is always a travesty.  We’re a garlic family so this is my take on the meatloaf hamburger, I’m calling it the mashed potato garlic loaf burger.  I might need to stop asking my four year old for naming help.
Ingredients
1 pack McCormick meatloaf mix (but you can use whatever one you prefer)
2 tablespoons minced garlic
1 cup ketchup
1 cup bbq sauce
1/2 cup milk
2 eggs
2 cups crushed garlic and butter croutons (you can use whatever you want for this, bread crumbs, panko, crushed ritz crackers)
1-2 pounds ground beef
Directions
Dump all that stuff in a bowl and mix it together.  I like to use my hands because I like the way it feels. I tried to get my son to help but he told me he couldn’t get dirty which I feel is a dirty lie.
After it’s good and mixed make some patties.  I’d recommend making them on the thicker side because we had problems with them being too small and not holding shape well.  The thicker ones did great though, so don’t be afraid to make it a nice fat hamburger patty
Slap those babies on the grill that you had lit up and waiting, cook like you normally would.
After you flip them squirt some ketchup on top to give it that nice meatloaf look

While that’s cooking  make mashed potatoes like you normally would.  I made instant ones because I have yet to replace the lost potato masher, but I doctored them up with butter and mayo.
While I was picking up all the stuff for dinner I found some really nice buns on sale at Walmart and I had some garlic butter leftover from a few meals ago so I opened them up and slathered the rest of the garlic butter on the buns then put them in the oven just long enough to get them a little toasty while my husband was handling the grill cooking.

Once everything is finished cooking you should just put some mashed potatoes on your bun (not a lot, I made that mistake once) Follow that by your burger patty then enjoy!  I also made mac and cheese to go along with the burgers because that’s my son’s favorite food and that’s what he asked for.
All in all this was a huge hit with my family and something I’ll be making again.  The thing I like, though, is that this is a recipe that can be changed into a different kind of taste by just tweaking it a little along with how easy it is to make. So next time you decide to grill out, think about this recipe and give it a try!

Ingredients

  • Meatloaf patties
  • Dump all that stuff in a bowl and mix it together.
  • After it's good and mixed make some patties. (thicker side works better)
  • Cook on the grill like normal
  • After you flip them squirt some ketchup on top to give it that nice meatloaf look
  • ---
  • While the pattties are grilling, make mashed potatoes like you normally would. (I used instant)
  • Add garlic butter to your buns and put them on the grill for a couple of minutes to get them crispy
  • Add mashed potatoes to your bun and then add your burger!
  • Enjoy!

    Such a unique recipe. I’ve got to try this. My husband will be thrilled when he sees what goes into it! And I agree, everything is better when grilled! I’ve never tried McCormick meatloaf mix before, I’ll have to pick some up. And I love the idea of using crushed garlic and butter croutons! I would have never thought of that!

    At first glance at the title, I admit I was a little nervous. After Redding through your post, I’m super excited to try them. I’ll have to brave the cold weather and get on this asap!
