Its summer time and that means outside. That means parties. That means break out the barbeque grill! It is time for the delicious sticky, yummy, barbeque days. I told my family that I wanted more than just plain ole chicken or plain ole ribs this summer. I want variety in my cooking and I want to sneak some veggies in there as well for my picky boys. I decided that I wanted to try some summer veggies this weekend. I bought some zucchini, some squash, some lovely grape tomatoes from the farmer’s market, and some KC Masterpiece Original Barbeque Sauce. I wanted a sweet and savory sauce to go with my meal. A new friend of mine suggested that I try it over penne which is usually not my pasta of choice but I love to try new recipes. That is why I went with this Summer Veggie BBQ Chicken Penne Recipe. I threw some stuff together and it came out perfect. My family thought it was amazing and my older son who HATES veggies ate two bowls of it.
Summer Veggie BBQ Chicken Penne Recipe
Ingredients
1 lb chicken (I bought the premade chicken from the freezer aisle because I was feeling lazy today)
KC Masterpiece Original BBQ Sauce
1 box of Penne pasta
1 Squash
1 Zucchini
1 tbsp Olive oil
OPTIONAL: I added some Gruyere shredded cheese on top of mine
Directions:
Cook your chicken thoroughly and then shred it or cut into small chunks.
Roll chicken through KC Masterpiece BBQ sauce until covered.
Follow directions to boil pasta. Drain. Roll pasta in olive oil. Add BBQ chicken.
Julienne vegetables and split tomatoes. Mix throughout pasta and add cheese on top if desired.

I have to admit. I’m a REAL bbq lover. And I wouldn’t have thought to put this recipe together, but now that I’ve seen it I’m saying YES! YES! and I can’t wait to make it. I think it might become a summer staple for us!
