Prepare brown rice by following directions according to the package (I usually boil mine for 20 min)
Chop chicken into small sized pieces
Heat 1 tbsp of vegetable oil in a large skillet over medium heat. Add chicken, bell pepper, onion, and garlic.
Stir chicken and veggies until the chicken is cooked all the way through. It may take 5-8 min. Remove chicken from the skillet and set aside.
Add 1 tbsp of oil to the skillet and turn the skillet up to medium-high heat. Slowly add the brown rice. Add soy sauce and rice vinegar to the skillet.
Stir in the peas and carrots. Cook for 3-5 minutes.
Add the chicken back to the skillet and heat for 3 minutes
