So I made a list of the things I needed and then headed out to Walmart in Alabaster, AL from my work. I got about halfway there (I have an hour commute) before my coworker called and said I left my purse and my list there. So I had to wait till that night and get grumpy Big E to take me.
After I picked up the stuff I needed, I went to the baking/sugar section and noticed that they had the blue Equal as well. Equal Spoonful. I am loving my store more and more. I didn’t want to get that many at the Alabaster, AL store though. I wanted to go to the next closest store to me in Clanton, AL. My mom teaches there so I though I would surprise her after work and we could have a late lunch and shop a bit! Jokes on me, we shopped for hours. I did get to give her a canister of Equal though. My father is diabetic and I think its amazing that he can have the same great taste of sugar but its way better for him.
So then I decided to make some Lemon Pound Cake and give it out at work! I went on the Equal website and searched for recipes using the yellow canister, Equal Sucralose. I found a great one that works with the Spoonful or Sucralose and I got to work.
2-1/2 cups reduced fat baking mix (Bisquick)
2 cups Equal® 2 tablespoons cornstarch
4 teaspoons grated lemon peel 1 cup light lemon flavored nonfat yogurt 6 tablespoons stick butter, melted 2 eggs 2 tablespoons fresh lemon juice 2 tablespoons 2% milk 1 teaspoon vanilla 1/2 teaspoon almond extract * May substitute 48 packets Equal sweetener

- Combine baking mix, Equal®, cornstarch and lemon peel. Mix in yogurt, melted butter, eggs, lemon juice, milk and flavorings until blended.
- Spoon mixture into well-sprayed 9 or 12-cup Bundt® cake pan or 9 x 5-inch loaf pan. Bake in preheated 350°F oven 40 to 45 minutes or until wooden pick inserted near center comes out clean. Let cake cool in pan 5 minutes. Remove and cool completely on wire rack.
- VARIATION: Lemon Poppy Seed Cake – Prepare cake as directed above, adding 3 tablespoons poppy seed to dry ingredient mixture. Complete recipe as directed.
On Thursday, I took my prizes to work with me. I gave my first one to Sharen. She lives near the Pell City, AL Walmart store that also sells Equal so I know she is glad I turned her on to such a great product! I am also giving one to my grandmother on Sunday. She lives in Odenville which is super close to Pell City.
I finished delivering my prizes and the rest of my pound cake. Everyone was really happy. I don’t know if they liked the pound cake more or the Equal but they were very appreciative either way. And don’t worry, I made Big E a whole pound cake for him to eat and share at his work too. I had so much shopping for and giving out a product that I trust and use myself.
