Suicide Squad is coming out in just a couple of weeks! I cant wait for August 5th. I am so excited. All the media is focused on how well Margot Robbie is going to do as Harley Quinn and I personally think she is the very best for the role. She is lovely and she just looks like she can play the very energetic, slightly maniacal Harley Quinn perfectly. I shared a Suicide Squad Inspired Deadshot Cocktail recently which was GREAT! You should check it out. And now I want to share these lovely, but wild Harley Quinn Cupcakes. I love a good Suicide Squad inspired recipe. You should definitely PIN THIS ONE FOR LATER!
Ingredients:
1 1/2 C Flour
1 C Sugar
1 3/4 tsp Baking Powder
2 tsp Vanilla plus vanilla bean paste
2 Eggs at room temp
1 C skim Milk
1/2 C sweet cream unsalted butter at room temp
Frosting Ingredients:
3 C powdered sugar
1/2 sweet cream (soft)
5 TBSP heavy cream
red and blue coloring
Directions:
-Preheat oven to 350 degrees.
-Line the muffin pan with cupcake baking liners
-Sift to combine flour, baking powder, salt in a bowl
-Cream the milk and sugar together in a mixing bowl.
-Mix with electric mixer on low.
-Test to make sure texture is smooth.
-Add eggs, one at a time, in with the milk and sugar mixture.
-Beat until all is combined on medium.
-Add vanilla and paste to the eggs, milk and sugar mixture.
-Mix just to combine.
-Bake at 350 degrees for 20 minutes.
-Allow to cool for 10 minutes.
Frosting Directions:
-In stand mixer, mix the 1/2 C sweet cream butter with the powdered sugar.
-Mix until sweet cream and powdered sugar look with small pebbles.
-Add heavy cream.
-Mix in the heavy cream until thoroughly blended.
-Test to see if the prepared frosting can stand while forming stiff peaks.
-If not mix in 1/2 C powdered sugar.
-Test again for stiff peaks.
-If not add 1/2 C powdered sugar.
-divide frosting into two bowls.
-in one bowl add in red coloring to the frosting, mix
-Repeat with the second bowl for blue
-Mix well.
-Fill a pastry bag with a star tip, half the bag being blue and the other half red.
-Frost cupcakes.

I have never tried cooking with vanilla bean paste before. actually I have never heard of it but I do like vanilla extract so on my next shopping trip I will be looking for vanilla bean paste.
