I love a meal that can be made in just one or two steps, that dirties a minimum of dishes, and that everyone in the family will LOVE. I’m always on the lookout for new and interesting ways to cheat on my meal prep; something that will take something I know is good and make it just that much easier. So when I started seeing ‘Ovenless Pizzas’ floating around on the internet, well that really got my attention. And it turns out that they’re pretty yummy, reaaaaaaly easy to cook, and you can make them any old way you choose and please your own palate.  YOU CAN PIN THIS RECIPE FOR LATER!

A non-stick pan with a tight lid works best, but you can also use a well-oiled iron skillet with a lid as well. The only other equipment you’ll need aside from a few measuring spoons/cups is just a simple bowl. Doesn’t get much easier than that, and clean-up is a cinch.

Ingredients:

For the dough:
Combine in a bowl-
1 1/4 cup all-purpose flour
1 teaspoon baking powder
generous pinch of salt
1 teaspoon dry yeast
2 teaspoons agave nectar
2/3 cup warm water

For the rest:
Toppings of your choice
Pizza sauce
Cheese or Vegan cheese product

Mix gently, but thoroughly. It will be a very loose, wet dough. Let the dough sit while you prepare your toppings.

Warm your skillet to just under medium- too hot, and the skillet will burn the crust. Spread your dough evenly into your warmed, oiled skillet (or non-stick skillet). Cover the entire surface area with sauce- not too much or it’ll get soupy. A nice, thin covering of sauce that goes all the way to the edge of the pan. Then add your toppings, and cover with your cheese or Vegan cheese of choice. Cover, and cook for 10 minutes. When it’s done, you should be able to lift the pizza out with a spatula onto a cutting board. Cut, and serve!

I topped my pizza with Daiya mozzarella shreds, slices of portobello mushrooms, and basil straight from my garden. It was the perfect combo!
